Behind every cake we offer lies an extensive process of formulation, testing, and refinement led by our in-house chefs, food technologists, and product development specialists. The R&D Center operates as both a creative lab and a controlled environment where tradition meets science to produce consistent, high-quality results.


Our development process begins with ingredient profiling—selecting and evaluating premium raw materials based on flavor purity, texture behavior, shelf life stability, and compatibility with our production standards. Whether working with couverture chocolate, fruit reductions, gluten-free flour blends, or plant-based alternatives, every input is analyzed not only for taste but for structural integrity and functional performance under varying conditions. Extensive trials are conducted using precise measurement systems, baking simulations, and organoleptic testing to ensure each component meets both culinary and technical benchmarks.

Formulas are documented using standardized protocols that allow for reproducibility at scale, while also accommodating flexibility for customization when necessary. Temperature curves, humidity factors, and resting times are carefully recorded, particularly for products requiring delicate processes such as layered mousses, stabilized whipped creams, or gluten-free batters. Texture analysis, pH control, and water activity levels are monitored to support food safety and product longevity—especially important for items intended for delivery or corporate distribution.

Beyond product development, the R&D Center also engages in trend research and sensory analysis to anticipate customer preferences. We draw insights from global flavor reports, regional taste shifts, and seasonal ingredient availability to propose timely and relevant additions to our menu. In collaboration with our marketing and customer service teams, we use feedback loops to revise formulas, improve consistency, and align with customer expectations.
